Shucking Good Hospitality's Italian Flagship Serves Up Italian-inspired Brunch and Spritz Program Built for Lingering

DENVER, CO (April 28, 2026) Oliver's Italian, the elevated Italian-American dining destination from Shucking Good Hospitality (SGH) in Greenwood Village, is serving an Italian-inspired brunch every Saturday and Sunday, featuring a $18.99 Brunch Special and a $18.99 Bottomless Spritz program, offering a spirited alternative that goes well beyond the traditional bottomless mimosas.

Available every Saturday and Sunday, the Bottomless Spritz offering features unlimited pours of Aperol Spritz, Bianco Spritz, Blood Orange Mimosa, or Peach Bellini for $18.99. Designed around Italian aperitivo culture, the program invites guests to settle in for a slower, more social weekend experience paired with a brunch menu of classic dishes with an Italian twist.

Standout dishes include Oliver's Brunch Bruschetta, layered with whipped ricotta, shaved mortadella, fried eggs, and hollandaise on pinsa; Italian Scrambled Eggs with prosciutto, soppressata, burrata, and roasted tomatoes; and the Sicilian Breakfast Burrito, filled with Carmine's Italian Sausage, pesto scrambled eggs, roasted peppers, and burrata. Cannoli French Toast and Lemon Ricotta Pancakes round out the sweeter side of the menu. Every entrée comes with complimentary Zeppole, house-made mini Italian donuts, as a nod to the hospitality the kitchen is known for.

“Brunch at Oliver’s was built to be something you can’t really get anywhere else in Denver,” said Sean Huggard, Founder and President of Shucking Good Hospitality. “We wanted it to feel really Italian, with dishes and flavors that set it apart from a typical brunch. The Bottomless Spritz program and zeppole are part of that. It is about giving our guests a reason to sit down, relax, and stay a while.”

The $18.99 Brunch Special pairs a personal Roman Pizza or a pasta with choices including Cacio e Pepe, Pasta Limone, or Spicy Vodka Rigatoni, alongside a Kale Caesar or house salad. The full dinner menu is also available during brunch, giving guests access to the full Oliver's experience on a weekend morning. Roman-style Pinsa options include the Fig and Pig, the Short Rib & Robiola, among others, and pastas like Shrimp Scampi, Potato Gnocchi, Lasagna Rotolo, Cacio e Pepe, and Spicy Vodka Rigatoni, alongside mains like Chicken Limone, Chicken Parmigiano, and Saltimbocca.

Beyond the Spritz, Oliver's famous Negroni Bar is open throughout brunch, featuring five house variations: the La Casata, Bianco, Americano, Grandioso, and Sbagliato. Guests can also opt for a $20 Negroni Sampler, which lets them choose any three.

A full coffee bar is available, along with housemade Italian sodas with flavors like Blood Orange, Cucumber-Lime, Italian Citrus, and more.
