Shucking Good Hospitality Delivers Dock-to-Dish Seafood and Elevated Italian Dining in Denver
From Power Lunches to Late-Night Oysters, Blue Island Oyster Bar and Oliver’s Italian Redefine the Workday and After-Hours Scene
DENVER, CO (February 17, 2026) – Shucking Good Hospitality (SGH), led by Founder & President Sean Huggard, is a Denver-based restaurant group best known for Blue Island Oyster Bar and Seafood, Oliver’s Italian, and the upcoming Ash and Agave. SGH is also one of the only restaurant groups in the Denver area to control its seafood supply from dock-to-dish. For over a decade, Blue Island has delivered East Coast-inspired seafood with unmatched freshness, sourcing oysters and seafood daily from its own Long Island farm. Meanwhile, Oliver’s Italian brings elevated Italian-American classics to Greenwood Village, where neighborhood regulars keep returning for its consistent, thoughtful execution.
From power lunches to late-night oyster specials, SGH’s restaurants combine chef-driven menus, exceptional sourcing, and warm hospitality to offer Denver diners an approachable, high-quality dining experience.
“Freshness is what we live for,” said Sean Huggard, Founder & President at Shucking Good Hospitality. “Working with our own shellfish farm on Long Island means our seafood goes straight from the water to your plate, or, as we like to say, ‘dock-to-dish.’ We bring that same care to everything we serve, so every bite feels fresh, thoughtful, and a little bit special. We feel lucky and proud to bring East Coast quality directly to Denver.”
