Oliver’s Italian Debuts Artisan Charcuterie Program, Bringing the Spirit of La Dolce Vita to Greenwood Village

Shucking Good Hospitality’s Italian Flagship Adds a Curated Selection of Meats, Cheeses, and Coastal Oysters

DENVER, CO (March 9, 2026) – Oliver’s Italian, the elevated Italian-American dining destination from Shucking Good Hospitality (SGH), has launched a new artisan charcuterie program designed for sharing around the table. Available now at the Greenwood Village restaurant, Oliver’s Charcuterie Board invites guests to mix and match from a hand-selected roster of imported meats, rare cheeses, and fresh oysters, all curated to reflect the restaurant’s East Coast Italian identity.

The program features six distinctive meats, including Finocchiona, Soppressata Calabrese, spreadable ‘Nduja, 24-Month Prosciutto di Parma, marbled Coppa, and silky Liver Pâté. Cheese selections, including Robiola, Gorgonzola Dolce, Pecorino Toscano, 24-Month Parmigiano Reggiano, and La Tur, round out the board with a range of textures and intensities, from creamy and tangy to firm and umami-rich. The board is entirely customizable, with selections priced at $8 each or three for $23.

“The charcuterie program is really an extension of how we think about hospitality. It’s meant for slowing down, sharing something thoughtfully curated, and staying a while longer,” said Sean Huggard, Founder & President of Shucking Good Hospitality. “We’re bringing in high-quality, imported products that are hard to find in Denver and presenting them in a way that’s meant to be enjoyed together.”

The charcuterie program also nods to SGH's dock-to-dish roots with a raw bar component. Oysters and clams sourced directly from Blue Island Oysters, SGH's own Long Island, NY farm supplying fresh seafood daily to all restaurants, anchor the selection alongside offerings from Prince Edward Island, the Chesapeake Bay, and South Puget Sound. Current selections include La Dolce Vita Oysters and Littleneck Clams from Blue Island, and Pink Moon, Blue Pearl, and Calm Cove oysters, available at 6 for $24 or 12 for $48.

Boards can be further customized with accoutrements, including artisan bread, marinated olives, fig jam, Marcona almonds, and truffle honey, each offered a la carte so guests can build their own experience.

This launch adds another dimension to Oliver’s Italian’s already robust menu, which spans pastas, Roman-style Pinsa (pizza), a signature Negroni program, an extensive wine list, and an all-day approach to dining that stretches from an Italian-inspired brunch through late-night digestivos.
