Oliver's Italian Brings 99¢ Oysters and a Coastal Italian Series to the Terrace This Summer

Greenwood Village's Oliver's Italian Runs Monthly Terrace Programming with Vino on the Terrace and a New Coastal Italy Dinner Series

DENVER, CO (May 19, 2026) Oliver's Italian, the elevated Italian-American concept from Shucking Good Hospitality (SGH), is expanding its summer terrace programming with two series running through the summer. Building on the momentum of its popular Vino on the Terrace series, Oliver's is adding a new Coastal Italian: Summer Series with monthly regional seafood menus including 99¢ oysters all day, giving guests another reason to return each month.

Throughout the summer, Vino on the Terrace continues as a monthly series of wine-focused evenings featuring 10–12 curated pours led by a wine expert. Each gathering is designed to be approachable and social, centered on seasonal wines, shared plates, and conversation rather than formal tasting protocols.

This month, the series presents La Terrasse: A Spritz Evening on the Terrace on Wednesday, May 27, at 5:30 p.m. The evening centers on two cocktails synonymous with European summer — the Hugo Spritz and St-Germain Spritz — served alongside seasonal seafood bites, a welcome apéritif, and terrace-side hospitality for $46 per guest.

“We’re not interested in doing some watered-down version of European aperitivo culture,” said Sean Huggard, Founder & President of Shucking Good Hospitality. “The best nights out are the ones where you lose track of time a little. You order another drink, split a few plates, the music’s right, the patio’s buzzing, and nobody’s looking at their watch. Denver needs more places with that kind of soul and energy, and that’s what we’re building at Oliver’s.”

Running alongside Vino on the Terrace is Oliver’s new Coastal Italian Summer Series, a monthly seafood-forward dinner experience, each exploring a different region of Italy’s coastline. Featuring coastal-inspired specials, a featured wine and cocktail pairing inspired by each region, and 99¢ oysters served all day, the series highlights the distinct flavors, seafood traditions, and seasonal ingredients that define Italy’s seaside dining culture.

The series kicks off on Wednesday, June 10, with Puglia, bringing the flavors of Italy’s sun-soaked southern coast to the table. Known for bold flavors, pristine shellfish, and easy-drinking wines, the evening features tuna crudo with capers, lemon zest, and herb oil, roasted littleneck clams in Calabrian chili butter, and 99¢ oysters on the half shell. Behind the bar, guests can expect a refreshing Negroamaro Rosé and a Rosé Spritz inspired by the region’s signature summer pours.

The series continues Wednesday, July 8, with a stop along the Amalfi Coast, drawing inspiration from seaside villages, citrus groves, and simple coastal cooking. The menu includes chilled shrimp with Calabrian cocktail sauce, tuna tartare with green olive tapenade and lemon aioli, and 99¢ oysters. Cocktail and wine offerings lean crisp and citrus-forward, including a Falanghina white wine and a Limoncello Martini.

The Coastal Italian Summer Series runs monthly through September, with Liguria on August 12 and Sicily closing out the summer on September 9.

Known for its Italian-American upscale comfort food, Roman-style pinsa, fresh seafood, classic and seasonal pasta dishes, and a cocktail program that embraces aperitivo hour, Oliver's is a natural home for long summer evenings on the terrace.
